A sweet and refreshing iced coffee to finish out the summer with. This beverage is reminiscent of the popular brown sugar shaken iced espresso that everyone loves. I make mine with homemade cold brew coffee, a coconut sugar-cinnamon simple syrup, and my favorite coconut milk, frothed of course.

I use flour made from the ancient grain spelt, which has more fiber than regular wheat flour, and this paired with coconut sugar makes for a low GI sweet treat!
