Maple Cinnamon Granola
Yields: 6 cups (12 servings) / Level: Easy
Prep time: 5 minutes / Bake time: 25 minutes / Total time: 30 minutes
Ingredients:
3 cups organic old fashioned oats.
1 cup puffed millet.
1 cup shaved almonds.
1/2 cup pepitas (pumpkin seeds).
3 Tbsp chia seeds.
1/4 cup flaked coconut.
1/2 tsp cinnamon.
1/2 cup melted coconut oil.
1/2 tsp salt, I use pink Himalayan salt.
1/2 cup pure maple syrup.
1 tsp vanilla extract.
Method:
Preheat oven to 350°F and line a sheet pan with parchment paper.
In a large bowl, mix together the oats, millet, almonds, pepitas, chia seeds, flaked coconut and ground cinnamon.
In a small bowl, mix together the melted coconut oil, salt, vanilla extract and maple syrup.
Pour the wet ingredients onto the dry ingredients and stir well to fully coat.
Pour mixture onto a parchment lined sheet pan and spread out across the pan into a thin layer.
Gently press the mixture down with a spatula.
Baked for 12 minutes in a 350°F oven.
After 12 minutes, pull out of the oven and stir.
Gently press the granola down again using your spatula.
Place back in the oven for about 12-15 minutes.
After the 12-15 minutes or when the granola is golden brown, pull from the oven and let cool.
Once completely cooled, break apart the granola and store in an air tight container.
