Pineapple Avocado Smoothie Bowl
I find it more satisfying to eat my smoothies rather than drink them. It’s hard to dislike something so fresh and vibrant!
Smoothie Base:
1 small frozen banana
half of a medium avocado
1/2 cup greek yogurt
1 cup chopped fresh pineapple (set aside 2 or 3 chunks for the topping)
1/2 scoop of VEGA vanilla protein powder
1/2 tsp chia seeds (set aside a tiny amount for topping)
Toppings:
Pineapple chunks
2 Tbsp Shaved Coconut (unsweetened)
10 Pistachios
Chia seeds
Method:
Blend all base ingredients in a high powered blender until smooth. You want the base to be very thick so the toppings don’t sink.
Pour or scoup the blended mixture into desired bowl.
Place toppings on top of the base so it looks beautiful and delicious.
