Thai Dragon Fruit Salad

Sweet exotic fruits tossed in a coconut dressing that tastes just as good as it looks.

Sweet exotic fruits tossed in a coconut dressing that tastes just as good as it looks.

My friend Stephen from California shared this recipe with me as a light and refreshing breakfast option when you want to impress your guests.

Ingredients:

  • 2 dragon fruits

  • 1 small papaya

  • 10-12 rambutans or lichees

  • 5 kiwis, peeled and cut into chunks

  • 1/2 pound strawberries, cut into chunks

  • 1/2 pound pineapple, cut into 1/2 inch pieces

  • 2 large bananas, sliced

  • 2 mangos, cut into 1/2 inch pieces

  • 1 Star fruit for garnish, sliced into stars.

Dressing Ingredients:

  • 1/2 cup canned coconut milk, full fat

  • 2 Tbsp fresh lime juice

  • 1 Tbsp coconut sugar

Method:

  • In a large bowl add all the cut fruits.

  • Cut the dragon fruit in half lengthwise and use a melon baller to scoop out the meat being careful to only get the meat and not the red skin. Add the dragon fruit balls to the large bowl of fruit.

  • Cut the papaya in half lengthwise and remove the seeds by using a spoon to scrape them out. Use a melon baller to scoop out the meat of the papaya and place the balls into the large bowl of fruit.

  • Peel the skins from the rambutan or lichee and cut the fruit meat away from the seed. Place fruit meat into the large bowl of fruit. Alternatively, you can peel the rambutan and then put the fruit in the bowl as is, however your guests will need to spit the pits out while eating — similar to spitting a cherry pit out.

  • For the dressing: stir together the coconut milk, coconut sugar and fresh lime juice in a small bowl.

  • Pour dressing over fruit and gently toss to combine.

  • Serve in desired bowls and garnish with star fruit.
