Cinnamon Coconut Cold Brew Coffee

Yield: 1 Beverage / Level: Easy / Prep Time: 15 min / Total Time: 20 min

A sweet and refreshing iced coffee to finish out the summer with. This beverage is reminiscent of the popular brown sugar shaken iced espresso that everyone loves. I make mine with homemade cold brew coffee, a coconut sugar-cinnamon simple syrup, and my favorite coconut milk, frothed of course.

Coffee Ingredients:

  • 1/2 cup cold brew coffee, recipe found here

  • 1/2 cup cold coconut milk

  • 2 Tbsp coconut sugar cinnamon simple syrup

Simple Syrup Ingredients:

  • 1/2 cup coconut sugar

  • 1 cinnamon stick

  • 2 tsp vanilla extract

  • 1/2 cup water

Method:

  • Heat coconut sugar, cinnamon stick and water in a small sauce pan on medium heat.

  • Once the mixture starts to bubble and all the sugar is dissolved, remove from the heat.

  • Pour the syrup in jar and place in refrigerator until completely cool.

  • I leave the cinnamon stick in to further flavor the syrup as it cools.

  • This simple syrup recipe yields 8 servings and can be kept in the refrigerator for up to 7 days.

  • Pour 1/2 cup of your favorite coconut milk in a small glass or coffee mug and using a coffee frother, whip air into the milk until it doubles in volume. You can also achieve this by putting your cold coconut milk in a jar with a lid and shaking it vigorously.

  • Fill a glass with ice and pour 1/2 cup cold brew coffee over the ice.

  • Add 2 Tbsp of the cooled cinnamon syrup to the glass and stir.

  • Pour the frothy coconut milk on top. The milk will loose its frothiness if left sitting too long so it’s best to use it right away.

  • Serve with a straw for stirring and optimal enjoyment.

Sometimes we don’t have time to make cold brew coffee and we want our fancy iced coffee beverage today!

Cold brew coffee substitution:

  • Brew your favorite coffee how your normaly would but make it much stronger. My favorite coffee grounds at the moment are Lobster Butter Love from RoosRoast.

  • Pour the hot coffee into a bowl and place in the refrigerator.

  • Once it’s cold, use it in place of the cold brew coffee in this recipe.

Oh and if you want a coffee beverage treat in the evening, try this technique using a decaf blend. So delicious!
