Green Bean Casserole with Air Fryer Onions

Green bean casserole is a Holiday classic especially in the midwest. My recipe is for mushroom lovers! Forget the cream of mushroom soup and instead use real mushrooms and real cream for an elevated comfort side dish. To make this extra special, I fried some onions in my new air fryer to keep it scratch-made and light. You won’t miss those plastic can french fried onions, I promise.

Ingredients:

  • 2 / 12oz bags of frozen green beans french cut, slightly thawed.

  • 8oz baby portabella mushrooms, sliced.

  • 8oz button mushrooms, sliced.

  • 2 large garlic cloves, minced.

  • 2 Tbsp unsalted butter.

  • 2 Tbsp flour.

  • 1 cup low sodium chicken stock.

  • 1 cup heavy cream.

  • 1/4 tsp freshly grated nutmeg (you can skip this, but it does add something special).

  • 1 tsp salt.

  • 1/2 tsp fresh ground black pepper.

Air Fryer Onion Ingredients:

  • 5 small yellow onions, julienned.

  • 1 cup of buttermilk.

  • 1 cup flour

  • 1 Tbsp cajun seasoning.

  • Non-stick spray.

Method:

  • Melt butter on medium heat in a oven safe pan (such as a cast iron pan).

  • Add the mushrooms, salt and pepper to the pan.

  • Turn the heat up to medium high and cook mushrooms until reduced in size and browned.

  • Turn down the heat to medium and add in the garlic and cook for 2 minutes being careful not to burn the garlic.

  • Add the freshly grated nutmeg.

  • Stir in the 2 Tbsp of flour and cook for about 2-4 minutes.

  • Stir in the 1 cup of chicken stock and turn the heat down to medium high.

  • Continue to cook while stirring until the mixture gets very thick.

  • Stir in the 1 cup heavy cream.

  • Continue to cook while stirring until the heavy cream reduces slightly and the mixture is thick.

  • Turn the heat off and add the green beans.

  • Stir to completely coat the green bean.

  • Preheat the oven to 400°F.

  • While the oven is preheating, let’s make the french fried onions.

  • I made my own buttermilk by adding a tsp of distilled vinegar to 1 cup of whole milk and letting it sit for about 10 minutes until it got chunky.

  • Soak your onions in the buttermilk for about 10-15 minutes in a small/medium bowl.

  • In a medium bowl, whisk together the cajun seasoning and flour.

  • Using tongs, grab some of the onion and allow excess buttermilk to drip off.

  • Drop onions into the flour mixture.

  • Continue to do this until all the onions are in the flour mixture.

  • Toss onions in the flour to throughly coat.

  • Set your air fryer to 400°F for an air fry cook time of 7 minutes.

  • When the machine preheats and tells you to add the food, sprinkle an even layer of the onions onto the rack using your hands to avoid too much clumping.

  • Give the onions a light spray of non-stick spray.

  • Let the onions cook until the machine tells you to shake (half way through the cooking time), give the onions a gentle shake and continue cooking for the remainder of the cook time.

  • Mix a few of the onions into the green bean mixture.

  • Add the rest on top and place the green bean casserole into the 400°F oven.

  • Bake for about 15 minutes or until bubbly.
