Cilantro Feta Turkey Meatballs
Yield: 18 meatballs or 4 servings / Level: Easy
Prep Time: 10 minutes / Cook Time: 15 minutes / Total Time: 25 minutes
Ingredients:
1 lb lean ground turkey
1/4 cup crumbled feta cheese
1 egg
1/4 cup creamy cilantro lemon dressing
5 crackers crushed up, I used Ritz crackers. You could definitely use gluten-free crackers or gluten-free bread crumbs.
1 Tbsp chopped fresh cilantro
1/4 tsp pink himalayan salt, you don’t need much because feta is salty.
1/2 tsp fresh ground black pepper
Preheat oven to 400°F.
In a medium bowl, mix everything together with clean hands.
Using a portion scoop or a spoon, grab about 1 ounce of the mixture and roll gently into a ball.
Place on a parchment paper lined sheet pan leaving at least 1 inch of space between each meatball.
Bake for about 15-20 minutes or until an internal temperature of 165°F.
Serve with the sauce of your choice or garnish with cilantro and eat them as is, yum!
