Coconut Sugar Candied Brie

This is hands down my favorite dessert and one of my favorite things to eat period. The creamy buttery brie, which is lightly sweetened with a coconut sugar crust, begs to be eaten with juicy fresh fruit and warm bread. It’s the perfect balance of flavors and textures in one bite. A wonderful addition to your next charcuterie board.

Ingredients:

  • An 8oz wheel of brie. Make sure it’s completely encased in its rind. Don’t use a wedge that was sliced from a wheel.

  • 1 Tbsp of coconut sugar

  • 1 Tbsp butter, softened

  • Fruit, nuts, and your choice of bread (all optional).

Method:

  • Preheat oven to 350°F and line a sheet tray with parchment paper.

  • Place wheel of brie in the middle of the pan and place in the oven for about 10-15 minutes.

  • While the brie is baking, prepare the coconut sugar topping.

  • Mix together the softened butter and coconut sugar until it resembles a paste.

  • Pull the brie out of the oven once is looks a little puffy and is soft to the touch. The inside will be melted but safely encased in the rind.

  • Turn on your broiler to high.

  • Spread the coconut sugar topping on the brie. Try to work quickly to avoid the butter melting too fast.

  • Place brie under the broiler for about 2 - 5 minutes, keeping an eye on it the entire time. You want a dark caramel color crust to form around the brie. Don’t let it burn!

  • Let cool for at least 10 minutes before slicing. The coconut sugar topping will harden as it cools and resemble a candied coating.

  • Serve with fruit, nuts and bread. Some of my favorites to eat brie with are: french bread, blueberries, dates and walnuts.
