Pineapple Avocado Smoothie Bowl

Avocado and greek yogurt create the creamiest base slightly sweetened by juicy pineapple. All you need is some crunch! Pistachios and coconut compliment these flavors perfectly.

I find it more satisfying to eat my smoothies rather than drink them. It’s hard to dislike something so fresh and vibrant!

Smoothie Base:

  • 1 small frozen banana

  • half of a medium avocado

  • 1/2 cup greek yogurt

  • 1 cup chopped fresh pineapple (set aside 2 or 3 chunks for the topping)

  • 1/2 scoop of VEGA vanilla protein powder

  • 1/2 tsp chia seeds (set aside a tiny amount for topping)

Toppings:

  • Pineapple chunks

  • 2 Tbsp Shaved Coconut (unsweetened)

  • 10 Pistachios

  • Chia seeds

Method:

  • Blend all base ingredients in a high powered blender until smooth. You want the base to be very thick so the toppings don’t sink.

  • Pour or scoup the blended mixture into desired bowl.

  • Place toppings on top of the base so it looks beautiful and delicious.
